A Quarter Beef Bundle will contain approximately 80-90 lbs. of beef, to include the following:
  • 8 lbs. of Tier 1 Steaks (Rib Eye & T-Bone)
  • 12 lbs. of Tier 2 Steaks (Round & Sirloin)
  • 25-30 lbs. of Mixed Bone-In & Boneless Roasts (eg Round, Rump, Sirloin Tip, Chuck)
  • 3 lbs. of Stew Meat
  • 2 lbs. of Soup Bones
  • 25-30 lbs. of Ground Beef (1 lb. bags)
  • Organs: Tongue, Heart, Liver, Ox Tail (free – available upon request)

An Eighth Beef Bundle will contain approximately 40-45 lbs. of beef, to include the following:
  • 4 lbs. of Tier 1 Steaks (Rib Eye & T-Bone)
  • 6 lbs. of Tier 2 Steaks (Round & Sirloin)
  • 12-15 lbs. of Mixed Bone-In & Boneless Roasts (eg Round, Rump, Sirloin Tip, Chuck)
  • 1-2 lbs. of Stew Meat
  • 1 lbs. of Soup Bones
  • 12-15 lbs. of Ground Beef (1 lb. bags)
  • Organs: Due to small quantity/size, organis are not available for the 1/8 Beef Orders

The Steer-A-Year is just that: it is 4 – Quarter Beef Bundles (Annual Total of 1 Whole Beef) processed and delivered every 3 months. We will process a 1/4 Beef Bundle every 3 months: Approximately March, June, September, December (depending when you start). You will pay a one-time deposit of $500.00, prior to delivery of your first bundle. You will pay for each quarter, per its Hanging Weight, upon processing/delivery of each order. The advantages of this option are primarily savings and reduced need for freezer space:

If you order a Steer-A-Year Bundle vs. 4 separate Quarter Beef Bundles, you will receive the Side of Beef Price Rate $4.75/lb Hanging Weight) as opposed to the Quarter Beef Price Rate ($5.25), which results in a savings of $0.50/lb. hanging weight. This is approximately 10% savings without the hassle and need for large amounts of freezer space! Both us and our customers have increased, predictability, throughout the year it helps ensure customers are not on a “waitlist” for beef for the upcoming year.

How Does It Work
  1. Order: You provide us with your orders specifics below, or fill out and submit the order form.
  2. Deposit: We respond to you with any questions that we may have about your submission, confirm your order, and send you a deposit request (new customers only). The deposit for quarter beef is $250.00 and $500.00 for a half or whole beef.
  3. Process: Once we’ve received your deposit, we process your beef.
  4. Payment: We send you an invoice (minus your deposit) upon processing for payment.
  5. Delivery/Pick-Up: We deliver or arrange for pick-up of your beef (Free within Treasure Valley)!
How Much Beef Should I Expect?

Obviously, it depends on the size of the beef and the size of your order. The beef we process are slightly smaller than average beef marketed in the grocery store. Why? Simply… they provide a better product. Most of our customers prefer smaller cuts of meat that are higher quality. We sell our beef by the “Hanging Weight” of the carcass. This is obtained by weighing the sides of the hot beef carcass on the rail prior to cooling and aging.

Hanging Weight of Your Meat

The “hanging weight” of a carcass is approximately 60-65% of the live weight of the animal. The hanging weight is obtained once the initial slaughter process is complete. The average hanging weight of a whole beef that we process is: approximately 500 pounds for whole, 250 pounds for half/side, 125 pounds per quarter. Please remember that these are rough averages and the actual weight can vary by the time of year and size of each individual beef.

Finished Weight Of Your Beef

The amount of beef that you actually receive will depend on the types of cuts that you select. The finished weight of most beef orders is approximately 60-70% of the hanging weight. For example, if you have a 250 pound hanging weight side of beef you would generally receive approximately 175 pounds of packaged beef that is ready to be cooked. In general, the more cuts that you select with bones the greater percentage the finished weight of your processed beef will be. For example, if you select to keep the brisket you will receive all of the bones within it in your final packaging. If not, the meat and fat will be taken off of the bone and ground while the bone is discarded and not part of your finished weight. Another good example are soup bones. For customers who don’t want their soup bones, they are discarded and are not part of the finished weight of your beef order but are part of the hanging weight.

What is the Price/Pound to My Door?

If you received an average order that yielded 65% of your hanging weight, the price per pound of beef to your door would be approximately:

  • 1/4 Beef Bundle – $8.07/lb
  • 1/8 Beef Bundle – $8.85/lb.
  • Steer-a-Year Bundle – $7.30/lb.

That is for all of the different cuts… rib eye steaks, T-bone, roasts, and ground beef!

Is This Economical?

Absolutely! Even if you just consider the direct economic benefits and that the average price of grass-fed beef burger in the Boise area is between $6.00/lb and $10.00/lb you are saving a lot of money. In a recent inquiry of local markets, I found that the grass-fed rib eye steaks cost between $16.00 and $22.00 per pound (OUCH!). So, in general you are receiving all of the cuts of meat within a quarter/side/whole beef for less than the average price of ground beef. In addition, you have secured and guaranteed your price and are not subject to the regular fluctuations of food prices. Not to mention the fact that most consumers purchase more products at the store than what they actually need for a meal, which indirectly increases their monthly food costs.
